On my recent adventure to New Zealand, I had the opportunity to visit my friends family. They made so many delicious meals it felt as if I was at a 5 star restaurant. Later I was informed by my friend that it was my turn to prepare a meal for everyone. I knew a fried egg and toast wouldn't cut it so I opted to try something new. I wanted to prepare something delicious, simple, and unique so I went out to the grocery store and found some Green Lipped Mussels. Green lipped Mussels are native to New Zealand and are said to be effective in treating Osteoarthritis, a condition that effects joints so I had to give them a try.

*Prep time depends on your presentation. If your mussels are really dirty and you are really detail oriented like myself it can take up to 60 minutes to clean them and prepare them.
SERVES 4 - 6
INGREDIENTS
- 24 pieces large green mussels
- 1/4 cup mayonnaise
- any chili sauce you prefer
- shredded parmesan cheese
- crushed garlic
- mixed herbs (or any garnish you desire)
- 1 cup of butter
- bread crumbs of your choice
INSTRUCTIONS
1. Rinse and clean mussels.
2. Get your ingredients ready. Preheat oven at 200 C or 400 F.
3. After all your mussels are cleaned bring water to a boil. If you want more flavor, you can steam them.
4. Take 1 cup of butter and 2 table spoons of minced garlic and microwave for 60 seconds and mix in bowl.
5. Mix 1 to 1 ratio of mayo and chili sauce in small bowl.
6. Boil or steam mussels for 3 to 5 minutes until they pop open. Discard the ones that don't open.
7. Pop of top shells and remove the beards inside mussels. You might find small crabs inside, discard them too.
8. Organize mussels on oven tray.
We flipped the half shells so the mussels can stay upright & retain the garlic butter when cooking.
9. Garb your garlic butter and spicy mayo sauce ...
10. Open each mussel and put desired amount of garlic butter & spicy mayo sauce inside.
I recommend not over doing, just a small amount is enough.
11. Grab the parmesan cheese.
12. Insert a pinch of parmesan cheese inside mussels.
13. Now dress the outside by pouring the garlic butter mix over the mussels.
14. Grab your crunchie crumbs.
15. Sprinkle crunchie crumb over your mussels.
16. Grab your garnish of choice. Here we used mixed herbs. You can also use green onions, bacon or whatever you like.
17. Sprinkle your choice of garnish over mussels.
18. Once all have been dressed take a picture of your hard work and post on instagram ;0)
19. Place mussels in oven for 15-20 minutes.
20. Serve with a healthy salad and enjoy.
